There comes that lunch or dinner time when I want to eat my veggies in a tasty, fun way. The boring cooked quinoa didn't please me so I thought of mixing it in my salad. Yes, I know there's nothing innovative about it, but I thought I'd share this recipe with you, for the times when you're looking for a nutritious easy meal.
I made this salad in minutes and it nicely accompanied some pork chops we cooked up (not pictured).
